Historical information about vinaigrettes: In 18th century, sanitation and personal hygiene were dreadfully neglected.   Vinaigrettes were used to combat the barrage of offensive odors present in everyday life.  A small sponge or piece of gauze would be scented with lavender water or perfume and placed under the grill of the vinaigrette.  When the vinaigrette was opened and held close to the face, a lovely, pleasant scent would be emitted.  In the 16th and 17th centuries, vinaigrettes were plain and generally made out of silver.  Later, in the 18th and 19th century, they ceased to be seen as only a functional item and started to become beautiful pieces of adornment.  The finest, most sought after vinaigrettes, were produced during the Georgian era.  Of Georgian vinaigrettes, the most desirable ones are those that were made in France and Switzerland and decorated with enamel.
